In a large bowl, combine chicken thighs with olive oil, garlic powder, smoked paprika, onion powder, kosher salt, black pepper, and honey. Mix well to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.
While chicken marinates, prepare the bang bang sauce by whisking together mayonnaise, Thai sweet chili sauce, sriracha, honey, lime juice, rice vinegar, and minced garlic in a small bowl. Taste and adjust heat level by adding more sriracha if desired. Refrigerate until ready to use.
Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
Preheat grill to medium-high heat and oil the grates well. Thread marinated chicken pieces onto soaked skewers, leaving small spaces between each piece for even cooking.
Grill skewers for 12-15 minutes total, turning every 3-4 minutes to ensure even browning on all sides. Chicken should reach an internal temperature of 165°F.
During the last 2-3 minutes of cooking, brush skewers generously with bang bang sauce. Turn once more to caramelize the sauce slightly.
Remove from grill and let rest for 2-3 minutes. Garnish with sesame seeds and sliced green onions. Serve immediately with extra sauce on the side for dipping.
