In a saucepan, combine pineapple juice, brown sugar, soy sauce, ketchup, apple cider vinegar, and garlic. Simmer gently.
Stir in the cornstarch slurry and cook until the sauce thickens and turns glossy.
Pour most of the sauce over the chicken, add the pineapple chunks, and bake until the chicken is cooked through and tender.
Serve hot over rice with extra sauce spooned on top.
