Ingredients
  

  • 3 cups zucchini grated and squeezed dry
  • 1 large egg
  • 1 cup mozzarella cheese divided
  • 1/3 cup Parmesan cheese grated
  • 1/4 cup almond flour or all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil or cooking spray for the pan

Method
 

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place the grated zucchini in a clean towel and squeeze out as much water as possible.
  3. In a bowl, combine the zucchini, egg, 1/2 cup mozzarella, Parmesan, flour, garlic powder, Italian seasoning, salt, and pepper.
  4. Mix until the batter looks thick and evenly combined.
  5. Spread the mixture into a thin rectangle on the baking sheet.
  6. Bake for 15 minutes, then top with the remaining mozzarella.
  7. Bake again until the cheese is melted and the edges are golden.
  8. Let rest for a few minutes before slicing into breadsticks and serving warm.

  • Squeeze the zucchini very well to prevent soggy breadsticks.
