Ingredients
  

  • 3 tablespoons unsalted butter
  • 1 small yellow onion diced small
  • 1 cup baby carrots sliced, or 2 large carrots diced
  • 4 stalks celery diced
  • 1 teaspoon garlic powder
  • 2 teaspoons fresh thyme or 1 teaspoon dried
  • 2 teaspoons fresh rosemary minced, or 1 teaspoon dried
  • 1 teaspoon chicken bouillon seasoning
  • 0.5 teaspoon salt plus more to taste
  • 0.5 teaspoon paprika
  • 0.5 teaspoon adobo seasoning
  • 0.5 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 1.5 cups uncooked orzo pasta
  • 3 cups chicken broth plus more as needed
  • 1 cup heavy cream or half and half
  • 2 cups cooked chicken shredded or chopped
  • 0.5 cup frozen peas or mix of peas, corn, and green beans
  • 2 tablespoons fresh parsley chopped, for garnish
  • 0.25 cup grated parmesan optional for serving

Method
 

  1. Melt 3 tablespoons butter in a large deep skillet or Dutch oven over medium heat. Add diced onion, sliced carrots, and diced celery. Cook for 5-6 minutes, stirring occasionally, until vegetables soften and onion turns translucent.
  2. Stir in garlic powder, thyme, rosemary, paprika, adobo seasoning, chicken bouillon, salt, and pepper. Cook for 1 minute until fragrant.
  3. Sprinkle ¼ cup flour over vegetables and stir well to coat. Cook for 1 minute to remove raw flour taste, creating a light roux.
  4. Add 1½ cups uncooked orzo to skillet. Slowly pour in 3 cups chicken broth while stirring constantly. Bring to gentle simmer and cook uncovered for 10 minutes, stirring every few minutes, until orzo is tender and most liquid is absorbed. Add more broth if mixture gets too thick.
  5. Stir in 1 cup heavy cream and 2 cups cooked chicken. Cook for 2-3 minutes until sauce is creamy and chicken is warmed through.
  6. Add frozen peas and cook for 1-2 minutes until bright green and tender. Taste and adjust seasoning with more salt or pepper if needed.
  7. Serve immediately, garnished with fresh parsley and grated parmesan if desired. Best enjoyed warm and creamy right off the stove.

Notes

  • For gluten-free version, use gluten-free orzo and 1:1 gluten-free flour blend
  • Stir frequently while orzo cooks to prevent sticking
  • Add extra broth if mixture becomes too thick during cooking
  • Store in airtight container in refrigerator for 3-4 days
  • Reheat with splash of broth or water to restore creamy consistency
