Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons chipotle peppers in adobo sauce minced
  • 2 tablespoons fresh lime juice about 1 large lime
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • salt and black pepper to taste
  • 2 cups cooked rice white, brown, or cauliflower rice
  • 1 large avocado sliced
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn kernels fresh, canned, or grilled
  • 1/2 cup fresh salsa or pico de gallo
  • fresh cilantro for garnish
  • lime wedges for serving

Method
 

  1. In a medium bowl, combine minced chipotle peppers, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper. Add shrimp and toss until well coated. Let marinate for 10-15 minutes.
  2. Heat a large skillet over medium-high heat. Add marinated shrimp in a single layer and cook for 2-3 minutes per side until pink and slightly charred. Don't overcook.
  3. While shrimp cooks, prepare your rice base according to package instructions if not pre-cooked.
  4. Slice avocado, rinse black beans, and prepare all toppings.
  5. Divide cooked rice among 4 bowls. Top with shrimp, avocado slices, black beans, corn, and salsa.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

  • Pat shrimp dry before marinating for better flavor adhesion
  • Don't overcook shrimp - they should curl into loose C-shapes, not tight O-shapes
  • For meal prep, store components separately and assemble when ready to eat
  • Adjust chipotle amount based on your heat preference
