Club Sandwich Pasta Salad

Ingredients
  

  • 12 ounces tri-color rotini or farfalle pasta
  • 8 ounces deli turkey breast diced into bite-sized pieces
  • 6 slices thick-cut bacon cooked until crisp and crumbled
  • 1 cup cherry or grape tomatoes halved
  • 2 cups romaine lettuce chopped
  • 1 cup cheddar cheese cubed or shredded
  • 3 green onions thinly sliced
  • 3/4 cup mayonnaise
  • 1/4 cup ranch dressing
  • 1 tablespoon ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • salt to taste

Method
 

  1. Cook 12 ounces pasta according to package directions until al dente. Drain well and rinse under cold water to stop cooking. Let drain completely.
  2. Cook 6 slices bacon until crisp. Let cool, then crumble into small pieces. Dice 8 ounces turkey into bite-sized chunks.
  3. In a large mixing bowl, combine cooled pasta, diced turkey, crumbled bacon, 1 cup halved tomatoes, 2 cups chopped lettuce, 1 cup cheese, and 3 sliced green onions.
  4. In a small bowl, whisk together 3/4 cup mayo, 1/4 cup ranch dressing, 1 tablespoon ranch seasoning, 1/2 teaspoon garlic powder, and 1/4 teaspoon pepper until smooth.
  5. Pour dressing over pasta mixture and toss gently until everything is evenly coated. Taste and adjust salt if needed.
  6. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld. Stir well before serving and add extra dressing if needed.

Notes

  • Cook pasta one minute less than al dente to prevent mushiness after chilling
  • For best results, make this salad 4-24 hours in advance
  • Store in an airtight container in the refrigerator for up to 3 days
  • Add lettuce right before serving if making ahead to prevent wilting
