Easy Million Dollar Mashed Potatoes

Ingredients
  

  • 5 pounds Russet potatoes peeled and diced into 1-inch cubes
  • 1 cup unsalted butter divided
  • 4 cups chicken broth or vegetable broth
  • 8 ounces full-fat cream cheese softened and cubed
  • 1/3 cup whole milk warmed
  • 1 teaspoon sea salt or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh chopped parsley or chives for garnish

Method
 

  1. Peel and dice 5 pounds Russet potatoes into 1-inch cubes. Add to slow cooker with 4 cups chicken broth and 1/2 cup butter.
  2. Cover and cook on high for 4 hours until potatoes are fork-tender.
  3. Carefully drain potatoes and return to slow cooker. Set to warm.
  4. Add remaining 1/2 cup butter, 8 ounces cream cheese, and 1/3 cup warmed milk.
  5. Use a potato masher to combine until smooth and creamy. Do not overmix.
  6. Season with 1 teaspoon sea salt and 1/2 teaspoon black pepper to taste.
  7. Garnish with fresh parsley or chives and serve immediately.

Notes

  • Cut potatoes into uniform sizes for even cooking
  • Use full-fat cream cheese for best texture
  • Warm milk before adding to prevent cooling potatoes
  • Don't overmix or potatoes can become gummy
  • Store leftovers up to 5 days in refrigerator
