Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup peanut butter creamy or chunky
  • 1 cup light brown sugar packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups quick-cooking oats
  • 2 teaspoons baking soda
  • 1/2 teaspoon fine salt

Method
 

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Beat the butter, peanut butter, brown sugar, and granulated sugar until creamy and fluffy.
  3. Add the eggs one at a time, then mix in the vanilla extract.
  4. Whisk together the flour, oats, baking soda, and salt. Stir the dry ingredients into the wet mixture just until combined.
  5. Scoop rounded tablespoons of dough onto the prepared sheets, leaving space between each cookie.
  6. Bake for 12 to 15 minutes, until the edges are golden and the centers look slightly soft.
  7. Cool the cookies on the baking sheet for 10 minutes, then transfer them to a wire rack.

Notes

  • Use quick oats for a tender, chewy texture.
  • Do not overbake if you prefer soft centers.
  • Chill the dough for 20 to 30 minutes if the cookies spread too quickly.
