  • 8 cups fresh watermelon cut into 1-inch cubes
  • 1 cup feta cheese crumbled or cubed, about 6 ounces
  • 1/2 cup fresh basil leaves thinly sliced into ribbons
  • 1/4 cup fresh mint leaves julienned, optional
  • 1 English cucumber halved and sliced, optional
  • 1/4 red onion thinly sliced, optional
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • balsamic glaze for drizzling, optional

Method
 

  1. Cut 8 cups watermelon into 1-inch cubes and place in a large serving bowl. If using, add the sliced cucumber and red onion.
  2. In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lime juice, 1 tablespoon honey, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well combined.
  3. Add 1 cup feta cheese and 1/2 cup basil (plus 1/4 cup mint if using) to the watermelon.
  4. Pour the dressing over the salad and toss gently to combine. Be careful not to over-mix.
  5. Drizzle with balsamic glaze if desired and serve immediately. Let sit for 5 minutes before serving for best flavor.

Notes

  • Use seedless watermelon for easier eating
  • Chill watermelon before assembling for most refreshing results
  • Add dressing just before serving to prevent sogginess
  • Store leftovers up to 24 hours but expect softer texture
