Garlic Butter Steak Bites and Potatoes

Tender seared steak bites and golden potatoes are finished with garlic, butter, thyme, oregano, and fresh parsley in one easy skillet meal.

Ingredients
  

  • 1 pound Yukon Gold potatoes Cut into half-inch cubes
  • 1 1/4 pounds Sirloin steak Cut into half-inch cubes
  • 1/4 cup Unsalted butter or ghee Divided
  • 1 tablespoon Olive oil
  • 3 cloves Garlic Finely minced
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Sea salt Plus more to taste
  • 1/4 teaspoon Ground black pepper Plus more to taste
  • 2 tablespoons Fresh parsley Chopped

Equipment

  • Large cast iron or stainless steel skillet
  • Cutting board
  • Sharp knife
  • Tongs or spatula

Method
 

  1. Prepare the skillet: Heat a large skillet over medium heat. Add the olive oil and half of the butter.
  2. Cook the potatoes: Add potatoes, thyme, oregano, salt, and pepper. Cook until golden and fork-tender, about 8 to 10 minutes, then transfer to a plate.
  3. Sear the steak: Increase the heat to medium-high. Add the remaining butter and steak pieces in a single layer. Cook for about 2 minutes, turn, and cook for 1 to 2 minutes more.
  4. Finish the dish: Return the potatoes to the skillet. Add minced garlic and toss for 30 to 60 seconds until fragrant. Garnish with parsley and serve.

Notes

  • Pat the steak and potatoes dry before cooking for better browning.
  • Do not overcrowd the skillet.
  • Use ghee instead of butter if preferred.
  • Refrigerate leftovers in an airtight container for up to four days.
