Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a bowl, toss potatoes with 2 tablespoons olive oil, half the garlic, Italian seasoning, paprika, salt, and pepper. Spread on one side of the pan.
Pat chicken breasts dry. Rub with remaining olive oil, garlic, salt, pepper, and half the parmesan. Place on the other side of the pan.
Roast for 30-35 minutes, flipping potatoes halfway through, until chicken reaches 165°F internally.
Brush with melted butter and sprinkle with remaining parmesan. Rest 5 minutes, garnish with parsley, and serve.
