Garlic Parmesan Chicken and Potatoes

Tender chicken breasts and crispy baby potatoes roasted together with garlic, parmesan, and herbs. One-pan dinner ready in 45 minutes.

Ingredients
  

  • 4 boneless skinless chicken breasts about 1.5 pounds
  • 1.5 pounds baby potatoes halved
  • 3 tablespoons olive oil divided
  • 6 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 cup grated parmesan cheese
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons fresh parsley chopped

Equipment

  • Large baking sheet
  • Mixing bowls

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, toss potatoes with 2 tablespoons olive oil, half the garlic, Italian seasoning, paprika, salt, and pepper. Spread on one side of the pan.
  3. Pat chicken breasts dry. Rub with remaining olive oil, garlic, salt, pepper, and half the parmesan. Place on the other side of the pan.
  4. Roast for 30-35 minutes, flipping potatoes halfway through, until chicken reaches 165°F internally.
  5. Brush with melted butter and sprinkle with remaining parmesan. Rest 5 minutes, garnish with parsley, and serve.

Notes

  • Cut potatoes uniformly for even cooking
  • Pat chicken completely dry before seasoning
  • Don't overcrowd the pan
  • Use freshly grated parmesan for best results
