No Bake Pineapple Cream Dessert

Ingredients
  

  • cups graham cracker crumbs about 20-22 whole crackers
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar sifted
  • 20 oz crushed pineapple very well drained
  • 8 oz whipped topping thawed

  • 9x9 inch baking dish
  • Electric mixer
  • Fine mesh strainer
  • Mixing bowls

Method
 

  1. Combine graham cracker crumbs with melted butter and granulated sugar. Mix until all crumbs are evenly moistened.
  2. Press 2 cups of crumb mixture firmly into bottom of 9x9 inch baking dish. Reserve remaining crumbs. Refrigerate crust.
  3. Beat cream cheese and softened butter together until completely smooth, about 2-3 minutes.
  4. Gradually add powdered sugar, mixing on low speed until fully incorporated.
  5. Drain crushed pineapple very well using fine mesh strainer, pressing with spoon to remove excess liquid.
  6. Fold drained pineapple into cream cheese mixture, then gently fold in whipped topping until combined.
  7. Spread filling evenly over chilled crust. Sprinkle reserved crumbs on top.
  8. Cover and refrigerate for at least 4 hours or overnight before serving.

  • Room temperature ingredients prevent lumps in filling
  • Drain pineapple thoroughly to avoid soggy dessert
