  • 1 pound large raw shrimp peeled and deveined, 26-30 count
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme crushed
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil for searing
  • 1/2 cup mayonnaise full-fat
  • 2 tablespoons whole grain mustard or Creole mustard
  • 1 teaspoon sweet paprika
  • 1 teaspoon Cajun seasoning
  • 2 teaspoons capers roughly chopped
  • 1 teaspoon prepared horseradish
  • 1/2 teaspoon pickle juice
  • 1/2 teaspoon hot sauce Tabasco or Crystal
  • 1 clove garlic minced or smashed

Method
 

  1. Make the remoulade sauce: In a small bowl, combine mayonnaise, whole grain mustard, sweet paprika, Cajun seasoning, capers, horseradish, pickle juice, hot sauce, and minced garlic. Whisk until smooth. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  2. Prepare the shrimp: Pat shrimp completely dry with paper towels. In a small bowl, mix together smoked paprika, cumin, thyme, cayenne, onion powder, garlic powder, salt, and black pepper.
  3. Season the shrimp: Place dried shrimp in a medium bowl and sprinkle with the blackening seasoning mixture. Toss gently until all shrimp are evenly coated. Let sit for 10-15 minutes if time allows.
  4. Heat the skillet: Place a large skillet over medium-high heat. Add olive oil and heat until hot and shimmery, about 1-2 minutes.
  5. Cook the shrimp: Add seasoned shrimp to the hot skillet in a single layer. Cook undisturbed for 1 minute until a dark crust forms. Flip and cook another 1 minute until shrimp turn opaque and curl into a J shape.
  6. Serve immediately: Transfer cooked shrimp to a serving plate. Serve warm with the remoulade sauce on the side for dipping or drizzling.

Notes

  • For best results, use fresh or properly thawed frozen shrimp and pat completely dry before seasoning
  • Don't overcrowd the pan - cook in batches if necessary for proper searing
  • Shrimp cook very quickly - watch closely to avoid overcooking
  • The remoulade sauce can be made up to 3-4 days ahead and stored in the refrigerator
  • Adjust cayenne pepper based on your heat preference
