Ingredients
  

  • 115 g unsalted butter melted
  • 125 g all-purpose flour
  • 65 g old-fashioned rolled oats do not use instant oats
  • 100 g granulated sugar divided
  • 55 g light brown sugar packed
  • 0.5 teaspoon fine salt
  • 300 g fresh strawberries hulled and coarsely chopped
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch

Method
 

  1. Prepare the pan: Heat the oven to 175°C. Line an 8-inch square pan with parchment paper.
  2. Make the crumble: Stir melted butter, flour, oats, brown sugar, half the granulated sugar, and salt until clumpy. Reserve about 1 cup.
  3. Build the crust: Press the remaining crumble firmly and evenly into the prepared pan.
  4. Prepare the filling: Toss strawberries with the remaining sugar, lemon juice, and cornstarch.
  5. Assemble: Spread the strawberry mixture over the crust and scatter the reserved crumble on top.
  6. Bake: Bake for about 50 minutes, until the edges bubble and the topping is lightly golden.
  7. Cool and slice: Cool completely on a rack before cutting into nine bars.

Notes

  • Use old-fashioned rolled oats for the best chewy texture.
  • Drain thawed frozen strawberries before using.
  • Cool completely before slicing so the filling can set.
  • Store airtight at room temperature for up to three days, refrigerate for up to seven days, or freeze for up to three months.
