Swedish Princess Cake Prinsesstårta

Ingredients
  

  • 4 large eggs room temperature
  • 1 cup granulated sugar 200g
  • 1/2 cup all-purpose flour 60g
  • 1/2 cup cornstarch 60g
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup whole milk 240ml
  • 4 large egg yolks
  • 1/3 cup sugar 65g for custard
  • 3 tablespoons cornstarch for custard
  • 2 teaspoons vanilla bean paste
  • 3 tablespoons unsalted butter
  • 1 cup raspberry jam
  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 pound green marzipan
  • 1 pink marzipan rose for decoration

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
  2. Beat eggs and 1 cup sugar on high speed for 8-10 minutes until pale, thick, and tripled in volume.
  3. Fold in flour, cornstarch, baking powder, and salt in three additions. Add vanilla extract. Pour into pan.
  4. Bake for 25-30 minutes until golden and springy. Cool completely in pan, then remove.
  5. Heat milk with vanilla bean paste until just simmering. Whisk egg yolks with 1/3 cup sugar until pale, then add 3 tablespoons cornstarch.
  6. Temper yolks with hot milk, return to saucepan, and cook over medium heat, stirring constantly, until thick and bubbling.
  7. Remove from heat and whisk in butter. Press plastic wrap onto surface and refrigerate until cold, at least 3 hours.
  8. Slice cooled cake horizontally into three even layers using a serrated knife.
  9. Place bottom layer on serving plate and spread with raspberry jam, leaving 1/2-inch border.
  10. Top with second cake layer, then spread half the cold custard over it.
  11. Add third layer and remaining custard, creating a slight dome shape.
  12. Whip heavy cream with powdered sugar until stiff peaks form. Spread over entire cake, smoothing into rounded dome.
  13. Roll out green marzipan into circle large enough to drape over cake. Place over whipped cream and press gently.
  14. Trim excess marzipan at base. Dust with powdered sugar and top with pink marzipan rose.
  15. Refrigerate for at least 2 hours before serving. Cut with sharp knife for neat slices.

Notes

  • Room temperature eggs whip up much higher for better volume
  • Chill custard thoroughly or it will melt the whipped cream
  • Use serrated knife with gentle sawing motion for clean cake layers
  • Work quickly when applying marzipan to prevent cream from softening
  • Keep refrigerated for up to 3 days in airtight container
