Teriyaki Chicken Skewers

Ingredients
  

  • 700 g boneless skinless chicken thighs cut into 2.5 cm pieces
  • 120 ml low-sodium soy sauce
  • 60 ml honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic finely grated
  • 1 tablespoon fresh ginger finely grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 small red bell pepper cut into chunks
  • 1 small red onion cut into wedges
  • 2 tablespoons green onions sliced
  • 1 teaspoon sesame seeds
  • 1 tablespoon neutral oil for cooking
  • cooked rice and lime wedges for serving

Method
 

  1. Make the sauce: Combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a saucepan. Warm until the honey dissolves.
  2. Thicken: Mix cornstarch with cold water. Whisk it into the sauce and simmer for 2 to 3 minutes. Cool completely.
  3. Marinate: Reserve half the sauce. Toss the chicken with the remaining sauce, cover, and refrigerate for at least 30 minutes.
  4. Assemble: Thread chicken, bell pepper, and onion onto soaked skewers, leaving small spaces between pieces.
  5. Grill: Cook over medium-high heat for 10 to 14 minutes, turning every 3 to 4 minutes. Baste near the end.
  6. Or bake: Bake at 220°C for 18 to 22 minutes, turning halfway. Broil briefly for extra caramelization if desired.
  7. Check and serve: Cook until the thickest chicken piece reaches 74°C. Rest for 5 minutes and garnish with sesame seeds and green onions.

Notes

  • Soak wooden skewers for at least 30 minutes.
  • Never reuse sauce that touched raw chicken unless it is boiled first.
  • Serve with rice, vegetables, cucumber salad, or grilled pineapple.
