  • 4 boneless skinless chicken breasts about 6 oz each, pounded to even thickness
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice fresh
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon sea salt
  • 2 tablespoons butter
  • 1 yellow onion medium, thinly sliced
  • 8 oz cremini mushrooms or button mushrooms, sliced
  • 6 oz Monterey Jack cheese thinly sliced or shredded
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. In a bowl, whisk together soy sauce, lemon juice, olive oil, garlic powder, onion powder, smoked paprika, black pepper, and sea salt to create the marinade.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring even coating. Refrigerate for at least 2 hours or up to 8 hours.
  3. Preheat oven to 400°F. Remove chicken from marinade and pat dry lightly.
  4. Heat butter in a large oven-safe skillet over medium-high heat. Sear chicken for 5 minutes per side until golden brown. Remove and set aside.
  5. In the same skillet, add sliced onion and cook for 3-4 minutes until softened. Add sliced mushrooms and cook another 4-5 minutes until golden and caramelized.
  6. Return chicken to skillet, nestling into mushroom and onion mixture. Top each breast with Monterey Jack cheese.
  7. Transfer skillet to oven and bake for 5-7 minutes until cheese is melted and chicken reaches 165°F internal temperature. Garnish with fresh parsley and serve immediately.
