Heat sesame oil in a large skillet over medium-high heat. Add the onion and cook for 2 to 3 minutes until softened.
Add garlic and ginger and cook for about 1 minute until fragrant.
Add the ground chicken, breaking it apart with a wooden spoon. Cook for 4 to 5 minutes until browned and no longer pink.
Whisk together tamari, Thai sweet chili sauce, lime juice, and maple syrup in a small bowl.
Pour the sauce into the skillet. Stir in the chopped cashews, reduce the heat, and simmer for 2 minutes.
Remove from the heat and fold in the carrots, scallions, and cilantro.
Spoon the filling into the butter lettuce leaves. Garnish with sesame seeds and lime wedges before serving.
