Vanilla White Chocolate Mousse

Ingredients
  

  • 1 cup white chocolate chips or chopped white chocolate bar 170g, high-quality
  • 2 cups heavy whipping cream 473ml, cold, divided
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons powdered sugar optional
  • fresh berries for serving
  • white chocolate shavings for garnish
  • mint leaves optional, for decoration

Method
 

  1. Place a metal or glass mixing bowl and beaters in the freezer for 10-15 minutes to chill.
  2. In a microwave-safe bowl, combine white chocolate chips with 1/2 cup heavy cream. Microwave at 50% power for 2 minutes, stirring halfway through, until smooth. Let cool to room temperature.
  3. Pour remaining 1 1/2 cups cold heavy cream into chilled bowl. Whip on high speed for 3-5 minutes until stiff peaks form.
  4. Add vanilla extract and optional powdered sugar to whipped cream. Fold in cooled white chocolate mixture gently with a spatula until fully combined with no streaks.
  5. Spoon or pipe mousse into serving glasses. Cover and refrigerate for at least 3 hours or overnight for best results.
  6. Before serving, garnish with fresh berries, white chocolate shavings, and mint leaves if desired.

Notes

  • Use high-quality white chocolate with at least 30% cocoa butter for smoothest texture
  • Ensure cream is very cold for proper whipping
  • Fold gently to maintain airy texture
  • Can be made up to 3 days ahead
  • Do not freeze as texture will become grainy
